CACAO AND COCOA are made from the Theobroma cacao tree, cacao beans are got from the tree’s seed pods. From then, how you process the cacao beans determines if you will get COCOA or CACAO.
After the seeds are out of the pods, processing begins, CACAO NIBS are cacao beans that are cut into tiny chunks and pieces, much like chocolate chips but without the added sugars and fats and so contain all of the fiber, fat, and nutrients that the cacao bean does.
When you read that chocolates are good for your health, they aren’t referring to PATCHI, TOBLERONE or store-bought chocolates laden with MILK and Sugar but what’s been spoken of is CACAO BEANS as it is the purest form of chocolate you can consume, because it is RAW and much less processed than chocolate bars. CACAO BUTTER; the fattiest part of the cacao beans has a rich, buttery texture that resembles white chocolate in taste and appearance.
Once Cacao butter is removed from the bean, the remaining part of the fruit is milled to CACAO POWDER; with no heat involved. COCOA powder is produced similarly to cacao except that it undergoes HEATING during processing.
CACAO is a SUPERFOOD,with the highest source of antioxidants, phenolic phytochemical, flavanoids, and magnesium of all foods. CACAO powder contains more fiber and calories than COCOA powder since more of the nutrients from the whole bean are still intact.
The ORAC-(oxygen radical absorbance capacity) of CACAO powder is 95,500,drops to 62,100 for CACAO NIBS and 26,000 for COCOA POWDER.
Though cocoa may seem inferior to raw cacao, it’s easier to find and less expensive and is still better than store bought cocoa powders that have added milk and sugar.
Both cacao and cocoa are highly nutritious and good for you and are sure to satisfy your chocolate cravings around the clock. If you want more nutrients, we would suggest CACAO, but if you want fewer calories and decent source of antioxidants, then definitely go with COCOA powder.
If you have used both COCOA and CACAO which one do you prefer? CACAO NIB.
